The Paddock Bakery

The Paddock Bakery, originally established in Burleigh Heads, opened its North Geelong location at Federal Mills in April 2024 and has quickly become a local favourite.

Hamilton Clark delivered the architecture and design services for the refurbishment of this heritage-listed building, preserving its 110+ year history while adapting it for a contemporary hospitality setting.

The project included the introduction of a wood-fired oven, viewing kitchen, front counter, back bar, commercial kitchen and customer amenities. The viewing kitchen forms a central feature of the space, showcasing the bakery’s signature sourdough and crème brûlée donuts in action.

An industrial base is softened through greenery, warm materials and considered furnishings, creating a space that feels relaxed yet refined. The result is a welcoming environment for daily trade, with the flexibility to support casual dining and events.
